One Quarter of Consumers Want GF Foods

Interesting article on Slate.com.  I don't know of any masochist who would pick this diet if it weren't doing them some good; particularly Americans who primarily select food because it's easy, fast and tastes good.  Somebody feels better when they go off wheat.  WHY?  That is the real question.
