One more pinterest recipe modified, tried and tested. Yum. The husband wanted to know what the noodles were made of in this casserole. He was surprised to hear that it was corn tortillas. It needed the extra spice of salsa. But, what Mexican recipe doesn't?
I think the whole thing could have been simplified by layering beans, meat (spiced up with taco seasoning) and tortillas with cheese and baking it. Simple, delicious and yet not so much spices and work.

tablespoons canola oil, saute until soft

onion, diced

jalapeno chile, minced (remove seeds and ribs for less heat)

garlic cloves, minced

teaspoon ground cumin

1/2 can
stewed tomatoes

1 pound
ground beef (cooked)

Coarse
salt and freshly ground pepper

½ package (5 ounces) frozen corn
Layer

1 cup
refried beans

4
ounces cheddar cheese, shredded (2 cups)

4 corn
tortillas

Heat
oil in a large skillet over medium heat. Add onion, jalapeno, garlic, and
cumin; season with salt and pepper. Cook, stirring occasionally, until
softened, 5 to 7 minutes. Add cooked
meat, corn and tomatoes. Taste and
adjust for seasoning.

OK, wish me luck: trying this one so that we can have SOMETHING to eat Mondays and Wednesdays when everyone is busy out of their mind.
