G-F Breakfast Casserole (Sister #3)

Sister #3, KaReen jumped onto the g-f bandwagon last of all of us and has two of her children joining her on the trip. But it turns out she is the most adventurous of the lot.  I think it's because she has six children in total and has cooked on the fly for all of them in innovative and frugal ways.

This is her recipe pass along, probably from Bisquick's site.  When I baked it the first time, we had a drop-in house guest who also turned out to be gluten free.  She DOES DISHES!  I love that girl.  Anyway, she loved the leftovers and wanted the recipe, but I was again living in the stix without reliable internet so HERE IT IS, JUST FOR YOU,  Miss SARAH.

1 lb. sausage cooked and drained
3 cups potatoes boiled and diced (or frozen diced hashbrown potatoes)
2 cups cheese grated and one cup of it reserved.
1 med. red pepper seeded and diced
1 med. onion diced

Blend the following:

3/4 cup g-f biscuit mix (Bisquick works when you have lots of extra $$$)
2 cups milk
1/4 teaspoon of pepper
6 eggs
1 tsp salt

Mix ingredients together and pour in greased 9 x 13 casserole.  Top with the reserved cheese. I made it the night before and then baked it at 400 for about 30 minutes or until the cheese is melted and the center set.

The topping is the faux Honduran Salsa Recipe.  Yummers.
