My good celiac friend, Sarah, made up this recipe and rought it to me as a Valentine gift. I'll take GF food any day. It makes me feel so loved. This recipe is so rich and delicious. It reminds me of the old fashioned hello dolly's of the pre-cd days.
Chocolate Coconut Pleasures!
½ cup butter
1 ½ cup Pamela’s Chocolate cookies – pulverized into crumbs
1 cup (heaping) semi-sweet chocolate chips
1 cup sweetened flaked coconut
1 cup chopped roasted almonds (the salted kind are best)
1 14-oz can sweetened condensed milk
Preheat the oven to 350 degrees F. Place the butter in a 9x13 baking dish and set it in the oven until the butter is melted. Tilt the pan to coat the bottom evenly. Sprinkle the cookie crumbs in the dish and toss to coat; press them into a layer. Pour the condensed milk over the cookie layer. Add a layer of chocolate chips, then add a layer of coconut, then almonds. Use the back of a spatula and press the mixture firmly into the dish.
Bake at 350 for about 20 to 25 minutes, until set. Cool completely on wire rack before cutting , but only if you can wait that long!
