GF No Flour MONSTER Cookies!!!!

Imagine my surprise at the baby shower last night when the cookie table queen (Tonnis, thanks for the recipe.) said that Monster cookies have no flour!  NO FLOUR--NEVER!   I can do THat!!!

Here is my g-f recipe rendition of monster cookies.

The only thing you must scavenge is oatmeal -- gf oatmeal.  So many of us can't eat it--even if it's manufactured specifically g-f, but if it doesn't prove a problem for you, think about making these!  YUM!

DO IT!  Find g-f oatmeal and you too can eat MONSTER cookies!

1/2 cups peanut butter
1/4 lb. butter (1/2 stick)
1 cup and 2 tablespoons brown sugar
1 cup sugar
3 eggs

 Cream together pb and butter and add sugars. Beat together and add eggs. Add
 1 teaspoon vanilla
1 teaspoon honey  (this must make everything stay chewy)
4 cups oatmeal
2 teaspoons baking soda

1/2 cup slivered almonds, choc chips, M&Ms, and coconut. 

This dough is not typical cookie feel.  It is gummy and sticky but they spread and bake up beautifully.  Part of the monster title is the amount of cookies this huge batch makes.

Bake at 350 for 12-15 minutes.

Delicious!

If yours flatten like pancake-monsters, stick 'em in the fridge for a few hours and then cram them into balls when you cook them. Bake immediately when they're out of the fridge.
