GF Breakfast Egg Casserole

One of these days I'm going to remember to take the "after" photo. GOOD GRIEF! ! !

Layer in a 9x13 pan,

5 cups G-F frozen potatoes, (hashbrowns, french fries, whatever) watch for flour on the label!



Saute:
1 medium onion, chopped
1/2 red pepper, chopped

Scatter in:

1/4 cup chopped fried bacon or
1/2 cup diced ham or sausage

Mix up and pour over:

8 eggs
1/2 cup milk
1/4 cup g-f flour (rice, corn, potato,)
1 teaspoon Lawry's seasoning salt
1/2 tsp salt
1/8 tsp pepper

I think the secret to this casserole was the Lawry's seasoning salt. It gives it a great flavor

Sprinkle 2 cups grated cheese over top and bake for an hour at about 350 until the eggs are set. Halfway through, I stirred the edge to the middle and it baked faster.

Can be fridged overnight and baked next the morning.
