The 2011 Mr. Darceys Guy Camping Trip turned out great!
It was six guys (three of them under 12--two of them ages 4 and 2,) in a pop-up travel trailer for two nights and three days.
No Pride, No Prejudice!
Hiking, floating, hunting--for everything but animals-- killing (stabbing the top of a pristine jar of peanut butter is tradition!) and cooking their own food.
What a great way to get back to nature.
Best of all, I didn't have to go!
And all of the Mister Darcey's had a delightful time. The welcome home party was delicious. That I can do!
Squash Green Chili Cheese Bake
2 cups rice cooked
3 zucchini sliced thin - steamed til tender
1 can green chilis (diced)
1 large tomato (thinly sliced)
12 oz. monterey jack cheese
In a 9x13 casserole, layer the rice, chopped chilis, one half of the cheese, zucchini and tomato.
Combine in a bowl:
- 1 tsp. garlic salt
- 2 cups sour cream (fat free is fine)
- 1 teaspoon of oregano
- 1/4 cup green pepper
- 1/4 cup chopped green onion
- 2 Tablespoons chopped parsley
Spoon this mixture over the tomato layer and scatter the remaining cheese over all. Bake at 350 for 45-60 minutes or until heated through and lightly browned on top.
The Oklahoma Baked Beans, and the gormand Mom-in-law's Squash Chili Cheese Bake were the pinnacles of the feast!
