Homemade GF Rotisserie Chicken Soup


Today it's so cold in OK, that my furnace is running for the first time this season. I'm making dutch oven cornbread and chicken soup from the (Sam' Club!!!) g-f rotisserie carcass and it smells delicious as I'm boiling, then straining and chopping celery, carrots and yukon gold baby potatoes. I throw in a dash of lemon pepper, my own Mr. Dash and Lawry's seasoning salt.

It tastes delicious, but the g-f reality is that soup is just as warm and comforting when you use a can of chicken broth, celery salt, onion powder, minced garlic and a can of carrots, diced potatoes and diced chicken.

Ah, chicken soup weather. YUM!
