Two full chicken breasts, deboned, boiled, cooled, diced.
3 stalks celery heart, diced finely
6 green onions chopped finely
1/2 jalapeno, deseeded and chopped finely
1/4 tsp. ground red pepper
1/2 tsp. minced garlic
1/4 tsp. cumin
1/2 cup mayonnaise
salt and pepper to taste.
Serve a dollop of salad in GF tortilla scoops, topped with a dash of paprika.
