Making muffins about every morning does make me an expert... 'cause I hold the record. I've probably botched more muffin batches than anyone else ever in history. (Don't even want to think about the pistachio ones I tried for St. Patrick's. Yeech!)
Yet today's batch turned out beautiful--doesn't that bode well for the day? I think so!
I used 1 1/2 cups of wet ingredients and 1 1/2 cups of my Magnificent Muffin mix.
In a 2 cup measure I wisked:
1/2 cup applesauce
1 tsp cinnamon
1 egg
1 Tbs. oil
Then I filled the remainder of the measuring cup up to the 1 1/2 cup mark with milk.
I stirred in 1 1/2 cup of the dry muffin mix and then filled mini-muffin cups half way and baked them 15 minutes at 350. Yum! It made 24 minis.

These look good! I also have made countless muffin recipes. Pistachio sounds good, wonder what went wrong?
V, I mentally crosspollinated two recipes and when that happens, only a mutant emerges. Oh well, the brain is off!
