Gayle's Banana Cake:
1/3 cup canola oil
1 cup brown sugar
2 large eggs
1 teaspoon vanilla
Beat together until fluffy, set aside and sift dry ingredients together
1 3/4 cup flour
1 1/4 tsp cinnamon
1 tsp. xanthun gum
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cup mashed ripe bananas
Alternate adding flour then banana to the oil/sugar mixture. Beat until combined.
Add 1/2 chopped pecans and 1/2 cup raisins if desired. Bake at 350 30-45 minutes in a 9x13 pan until the top springs back when touched.
