G-F Baked Cinnamon Doughnut Holes


I'm craving doughnuts and pinterest piqued my interest with baked doughnuts so it's time for another recipe modification.

1 cup crushed g-f rice crisp cereal
1 1/3 cup g-f flour
1 1/2 teaspoon baking powder
1/4 cup sugar
1 teaspoon xanthum gum

With a mixer, blend in

1/4 cup butter or shortening just until it resembles rough crumbs

Add about 1/2 cup milk with 1 teaspoon vanilla - just enough for the dough to form balls

Roll into balls and dip in melted butter and then cinnamon/sugar

Bake at 400 for 15-17 minutes until a toothpick inserted comes out clean.

I reserved some of them for glaze just to see if they are delicious that way too.

Reality Bite: These have more of the density and texture of doughnut cake balls.
