1 TBS chopped garlic sauteed in
1 stick (1/2 cup) butter (I'm wondering how to take down the butter when I notice the oil)
1/2 cup veg oil
1/2 cup sugar
1/2 tsp salt
3 whole eggs
1/2 cup corn meal
2 1/4 cups corn flour (masa harina)
2 TBS. baking powder
16 oz. bag frozen corn
1 cup chopped green onions
3/4 tsp. cajun spice
1/2 tsp xanthan gum
2 cups milk
1/2 cup cheddar cheese (shredded
1 cube bacon bouillon
Gently saute garlic in butter, add oil, add bouillon.
Mix dry ingredients
Mix wet ingredients.
Slowly stream garlic fat mixture into milk mixture.
Add dry ingredients. Mix til smooth
Scraping often, add corn, green onions and cheese.
Mix together until incorporated. Scoop batter into muffin tins and bake at 350 for 15-20 minutes.
