Last week I ate out three times--a hat trick of GF risk and somehow, despite frequenting only recommended GF restaurants, and sticking to the gf menu items, I got glutened. And the resulting sickness has reminded me of Dr. Fasano's article.
Page 6 of 7 says even 40 mg of gluten (ABOUT ONE CRUMB) causes serious damage. Bottom line, no cheating! Never.
My blog also has an article written by Brenda Watson concluding that gluten sensitivity evolves to full blown celiac disease with cheating. We already have proof positive that DH (previously only treated with Zonulin, and no gf diet) evolves into full-blown celiac disease.
