GF Orange Rolls II
Yuck! I didn't have much luck with the recipe of orange rolls. Sorry Mindy for not fulfilling your request! I'll modify it again and try once more. I'll make half a batch so I don't weigh down the trash bag to bulging if it all fails.
This was the recipe and I made it as stated... however, I may have used too heavy a flour and it sat in my fridge 24 hours... too long.
Hopefully you all have better luck than I did.

Crunchy Caramel Corn
Fall, the perfect time to make crunchy caramel corn. This is Grandma's recipe and it is delicious. (In spite of being a little unfocused.) It is made more gourmet by the use of Bob's Red Mill White popcorn. It's worth every dime for the tender kernels and lack of tough hulls.

2 cups brown sugar
1 cup butter
1/2 cup white corn syrup
Mix these ingredients and stir while bringing to a soft boil.
Immediately take off the heat and add 1 tsp. baking soda.
Stir until frothy, pour over about 8 cups popped corn. Turn out onto a cookie sheet, bake at 300 for about an hour, stirring and breaking apart.
I made it with half the butter and it was just as delicious. I'm certain that the refined tongues would be able to tell the difference, but not me.

Okay, Chef Michael Fusco is brilliant and fabulous and from Oklahoma, which explains why bacon, onions, cheese, cajun spice and garlic are in his corn muffin mix.
I admit it, I ate them. And they were delicious. I just cannot bring myself make them. It goes against every core value to put that much fat in my face. YUM.
But, to make for others, for a GF Potluck? These would be magnificent. Hail Michael.

I got the best chowder recipe from Michael Fusco's restaurant in Tulsa--it's all butter and cream, so how can it be bad? During the GF class he mentioned that it's easy to make corn or clam chowder, just add one ingredient or the other at the end.
In these dusky days of fall, don't forget the delicious soups thickened with rice flour--serve them with your most delicious crusty homemade breads.

Okay, today I found the guar gum. Not in the deepest darkest depths as I thought, but right there, hiding in plain sight, in pantry #1, on the second shelf, in front, just at eye level. Two packages, so I'd better move them to the freezer, for safety and longevity and to increase the chances that I might again locate this product when I run out.

Sometimes hiding in plain sight happens and I wonder what purpose it serves in the big plan of life. Am I to learn something? To rake the pantry out more often? To encourage me to create a better method of storage? Or just a reminder...
